In order to obtain safe and secure beef, every effort is made to ensure cows enjoy a stress-free environment. Nakanishi Farm is one of the leading fattening farms among “Kobe Beef” producers. The head farmer, Yoshitoku Nakanishi, starts his production of “Kobe Beef” by selecting good source calves. Mr. Nakanishi investigates the breeding history of calves that are put up for auction, going back three generations. He studies the calves’ muscle quality, skeletal structure, their temperaments and health conditions. Because if he takes in calves that are restless or have aggresive tendencies, it might exert a bad influence on other cows. After moving the calves into his farm, Mr. Nakanishi pays every attention to hygiene in the cattle paddock. He checks whether the cows are eating well, the paddocks are adequately ventilated or whether his cows are getting along with each other. If he finds anything unusual, he never leaves it to chance and takes every appropriate measure, no matter how small the problem might appear to be.
Mr. Nakanishi is so sensitive to these issues because even the slightest stress—the kind that people would not usually notice—might interfere with a healthy process of fattening. If any cow falls ill, he administers the appropriate medicines as well. Mr. Nakanishi makes every effort, devoting all of his energy, to the rearing of cattle in a healthy and comfortable environment and to ensuring people’s healthy and safety dietary lifestyle. To him, there is nothing more disgraceful than the slightest failure to ensure the safety of the meat produced by his cattle.

Of course, even for the selection of food to give, Nakanishi's unique sticking commitment. For example, we used lactic fermented corn silage for cattle of 9 to 13 months, silage produced in the United States from the 14th month onwards and using feed for growth, in order to make a sturdy stomach for the first year in the early fattening period Because we are controlling the finish of the body thinking that the second year of latter term is meant to improve meat quality. While carefully observing the state of the cattle occasionally, we try to make delicate adjustments and grow nice fish meat with a natural feed. It is surprising that checking the appearance of that color from the same feed mass and changing the blending amount while calculating the contained nutrients. It seems that feeds which seems not enough amount of vitamins are trying to give it after sun drying in advance. In addition, all grasses such as Sudan grass are selected for those with low pesticide, and the use of feeds that are concerned about the use of pesticides is prohibited at all.

The calves that are raised under the perfect conditions for fattening while enjoying the best specially selected and carefully blended ingredients, grows into Tajima cows that have beautiful and slightly shiny appearance with its characteristically short and fluffy coat. Although Tajima cows are judged as to whether they qualify as “Kobe beef” only after they have been slaughtered, Mr. Nakanishi ensured that we can predict the results of the screening test, by carefully examining the conditions of their development, especially how they have fed, and their physical health during their growth. In other words, the fact that Mr. Nakanishi is able to raise cows with a consistent 90% pass rate every year is not mere luck or coincidence but the result of his careful and rational approach based on accurate fattening plans.
