▎Ramen Name: Hachiza and Set, Single Choice
On my last night in the Sannomiya area of Kobe, I ended my four-night streak of late-night ramen meals with Kobe beef ramen.
Hachiza and its main branch is a yakiniku (grilled meat) restaurant. The same brand opened a ramen shop nearby using Kobe beef as its brand. The night I went was a weekday evening, and the manager said that only the Hachiza and set meal were available; there were no other options. So I had to eat that. The set meal cost 1800 yen, the most expensive ramen meal I've ever had in Japan, but considering it was Kobe beef and a set meal, it wasn't too expensive.
First came two pieces of Kobe beef sushi. Honestly, I couldn't tell the difference between an 80-point and a 90-point sushi. The beef was tender, juicy, and thick, while the rice was firm, fragrant, and chewy. You could easily cut both the beef and rice in one bite without having to tear or pull them apart.
The main course, Kobe beef ramen, was a salt-based beef bone broth with a very strong beef flavor. Frankly, I'm not a big fan of overly strong beef broths (I've had beef-related ramen at Kaohsiung's first-generation Hanayama and Tainan's Rengoku in the past, and they all felt a bit off).
The meat seemed to be thinly sliced Kobe beef short ribs, braised? Unfortunately, I don't speak Japanese and couldn't ask the owner. It was tender, flavorful, and not too greasy.
Next came Kobe beef simmered ramen (stewed beef tendon?) and white rice. The flavor was quite strong, and I finished it perfectly with the rice. In conclusion: The appetizer sushi had tender beef; the main course, ramen, had a rich beef flavor; the stewed beef tendon was savory and went well with rice. Overall, the flavor was quite robust. Customers with a lighter palate might find it cloying towards the end. It wasn't too salty, but the continuous heavy flavor combo of Wagyu beef fat → rich beef bone broth → stewed beef tendon could be a bit overwhelming. Although this bowl of ramen was almost twice the price of a regular meal, and although it didn't quite suit my personal taste, for ramen lovers visiting Kobe, trying a bowl of Kobe beef ramen is a reasonable experience.
