Our chef was a wonderful woman named Geetu. She was young, and only had two years of experience, but she delivered in spades. We didn't buy majorly expensive cuts. Mine was $103, my Mom's was $32. But the costs were far worth the flavor, tenderness, and experience. If you order at lunch, at least when we went, you got a "set" or meal for free with your cut.
The meal is paced somewhat. A quick sear on the meats and then a slow cook on the veggies (onion, mushroom, eggplant, peppers.)
Once the veggies were plated, along with some salt, wasabi, and kobe beef miso. A helping of miso soup on the side, some soy sauce, garlic, and vinegar, with a glass of water and a coke made it a delightful lunch experience. The meat was then sliced and cooked in chunks of four bites, each delivered on time and perfectly medium rare, with Geetu offering wonderful recommendations on what to pair each bite with.
In all, this was the highlight of food for our two weeks, and it'll be your favorite too. Geetu deserves all the love. She was fantastic and friendly and very polite.
