My wife was sceptical when she saw the prices...but not for long. Restaurant is very cozy, and you get to eat at the counter with a dedicated chef.
Our chef was T. Ishikawa. He was extremely nice, professional and giving plenty of advices about how to enjoy the most every slice of beef.
"First piece, I advise you to take it plain (no sauce or salt) as to get your mouth familiar with the meat"; "(...) For this piece, I recommend adding just a bit of wasabi and rock salt"; etc.
Now let's talk about the meat. It's Kobe. It's melting in the mouth. And unlike a lot of restaurants back home in Europe, since they know how to cook it properly here, it's a perfect balance of fat and red meat on your tongue.
The chef's technique is very good. He will just surprise the meat initially and then let it rest to absorb the sucs. Eventually he will cook every additional pieces to the perfect tenderness as you, the client, progress through your plate. This way every piece of meat is always at the perfect temperature to be enjoyed.
Special mention as well for the vegetables that are cooked in little pouches with a delicious butter and garlic assaisonnement. On T. Ishikawa's advice, I dipped my rice in the sauce at the end to enjoy every bit of it.
Finally let's address the overall ambiance. The chefs are extremely nice. They speak a fluent English and are good conversationalists. The restaurant is calm despite the busy street outside.
