Keiji Sugimoto was really nice, and took great honor in making our food. You can tell he takes his business and culinary expertise with utmost seriousness. To see him bow to the meat just before he cooks it, reminds me how much respect and discipline he puts forth in his craft. I would eat here again and again, if I lived close enough.
